The high percentage of cocoa butter makes this easy to melt with a silky mouthfeel. Allez Couverture Chocolate is excellent for molding truffles and enrobing candy centers or caramel. It's also perfect for dipping strawberries and biscotti or drizzling for a trendy drip cake.
