Dyn-A-Max is a blend of emulsifiers that can be used for all yeast raised goods. It improves freshness and tenderness of the finished product, provides maximum volume, strong straight side walls and fine grain and texture. It also easily scales, handles and stores well. Dyn-A-Max produces a drier dough that that improves machinability through dividers, rounders and moulders and is effective at low levels.
